Well, I have decided to redo the interior of my car.. Finally
Got a quote to recover the door panels, seats, and dash in vinyl(leather is WAY too expensive!). Looking at having them install carpet too. The interior is in pretty good shape, just need a little refresh so I might as well do it!
Should I put padding(dynomat or something) under the carpet?

    Taking the car down saturday.
Basically going to have the outer seat covered in something similar to this with the same carpet as in the picture:

Yes you should put dynomat or something under the carpet as well as the package tray, the sail panels, the roof and the doors. If you can since I assume they are pulling dash to wrap it. put sound deadening against firewall as well.

I will be putting it on the front firewall and floor under the drive/passenger.

If you don't want to spend a ton of money the CarInsulation product is good and very reasonably priced.

Quick install to, if you're paying someone to do it.

Do you have this in your car? What difference can you tell compared to the factory sound deadening material? If any.
