    I've always liked 3:42 gears.

if it's mainly street and no freeway usage then go with a 4.10 or 4.56 rear gear , that would be a fun gear with neck snapping acceleration

What would 410 RPMs be at going around 60-70?

3.73 or 3.42 but a lot of factors to consider, transmission and powerband specifically.
I would NOT recommend a 4.10 or 4.56 unless you have real tall tires and NEVER get on the freeway for more than a couple miles or have an O.D. transmission.

    Easily, pull the cover off,

I like a 3.73 for a street strip application with a 28" tall tire, like the ones you have.
