Chicken sausage and pineapple fried rice

    Made this a few weeks ago for company. It was a big hit. Hope you like it!

    2 cups cooked jasmine rice (it's the only rice I used for fried rice because it's a sterdy grain and it soaks up all the flavors really well)
    2 to 3 precooked spicy chicken sausage (like chicken and jalepeno from costco)
    4 slices of bacon chopped
    1 red/yellow bell pepper chopped
    1 small sweet onion chopped
    1 jalapeno finely chopped (seeds and white membrain removed for mild. Seeds intact for a truly spicy dish)
    2 large cloves of garlic finely chopped
    1 cup chopped pineapple
    1/2 cup fresh chopped cilantro
    1/4 cup fresh chopped green onion
    cumin
    cayenne pepper
    salt and pepper, lots of pepper


    In a large high sided pan cook the chopped bacon till almost crispy. Remove and set aside. To the rendered bacon fat, add the onion, bell pepper and sausage. Cook till onions are just translucent and sausage is warmed through. Add garlic and the jalalpeno. Season the veggie mixture with salt and pepper, cumin, and cayenne to suit your tastes. Now add the jasmine rice and pineapple and cooked bacon. Mix all ingredients and remove from heat into serving dish. Add cilantro and garnish with green onion. Serve with some naan bread and ginger beer! Yuuuummmm.

    you're very welcome. Hope you like spicy food. Because it had us running for the water hose!
