I make sure my seatbelt is fastened and the tunes from my phone are synced to the stereo. Off I go.

Something I have gained a lot of appreciation for are frequent checks of oil and coolant levels on my vehicles. Early this spring I discovered my 97 C1500 had an empty coolant reservoir bottle and the oil level was about a half quart over full. Darned intake gaskets failed and didn't catch it until after about a 50 mile trip. Antifreeze dumped right into the crankcase. I immediately had the intake gaskets replaced and did three short interval oil changes afterwards to help flush out the oil/antifreeze mess, but am still waiting for the other shoe to drop to see if there was any internal damage. I'm really kicking myself for not having taken the 5 minutes to look under the hood before driving off that day.
If it starts… It’s good to go.

In addition to everything else that has been mentioned . . .
If you have auxiliary cooling fans ( radiator, trans cooler, oil cooler, etc ), be sure they are working properly.
Check wiper blades, too !

Gas gauge and a valid CC in case 
Lug nuts / open hood while warming up and make sure no gas leaks / water leaks and no left over tools left behind from the last job.. enjoy the ride and I try to drive and listen for the first few miles to make sure no weird noise or clunks . When I first redid the car I had a lug nut issue that almost cost me a ton, I thought my wheel was in balanced and was heading home when a drive next to me said hey!!! Your front wheel is missing some lug nuts . So that’s the last time for impact gun. All by hand now .

I generally check things over when I first get it out of winter storage and after that I make sure I have my cellphone when I go anywhere. Luckily I haven't had any issues and since premium was almost $6.00/gallon long trips weren't in the cards.....
